If I have three identical inverters rated @ 3kwac, and 240VAC, on a residential system, (non-back up), what would be the best utility disconnect rating for this system?

You need to multiply the inverter output current with 1.25 to find the appropriate AC disconnect rating.
I attach the Long Beach, CA permit authority document that tells you how to calculate what you are looking for. It's also explained in NEC code book.
