So I have a collection of panels, inverters, racking and wiring to rack jboxes.

After that then what?

I'm told I'll need a master cutoff switch and a production meter between the array and the main breaker panel. At some point the outputs from the micro inverts for the 2 arrays get combined and fed into a master cut off switch to a production meter and into the mains panel,  but so far no ideas of what products to be pricing.

This is a typical 5 kw install so I just need examples of what others are buying for  grid tied systems

Todd,The best way to approach this would be to buy one of our simple PV design packages - it would probably cost about $700 and would generate a complete 1-line drawing with a basic layout.
The drawing will be based on the components you have on hand and relevant local electrical code, so you could use it for permitting.
You may not even need that - if you contact one of our account reps, they may be able to suggest and ship the final components to get you connected. You can reach them at:1.800.409.2257
Grab a copy of Photovoltaic Systems by Dunlop and study up on PV system design. This is not something you learn while installing your first system. Even if you pay to have a design done you need to understand why and how that design was done. It's also not something that can be taught through a forum.
Good luck.
