Do you hook modules in series or in parallel for a 24V system?

It depends on the charge controller.
Some charge controllers would not accept solar panels with higher voltages, whereas some of the charge controller's have a maximum 150V input voltage.
If you are using a PWM charge controller, you must check the input voltage rating and most probably you'd have to connect the panels in parallel. But you also need too look at the input current rating.
So, the answer to your question depends on the max. voltage input and max. current rating of the charge controller.
